Low calorie cauliflower cheese

There’s one food I miss and that’s cheese, I love cauliflower cheese. Recently I was introduced to Engevita, nutritional yeast for making savoury cheese like dishes so I thought I’d have a go at making a low calorie cauliflower cheese. I’ve worked out the calorie content as 260 calories for a good plateful. And this amount of sauce could easily take more cauli if you prefer.

Ingredients
500g cauliflower florets
300 ml skimmed milk
50g parmisan cheese grated
20g Engevita
1 tablesp cornflour mixed with a little milk
1/2 vegetable stock cube
 
 
 
 
 
 

Put the cauliflower florets in a pan with the milk, seasoning and the stock cube, put on the lid and simmer until tender

Drain the cauliflower and put in a dish, add the engevita to the milk and stir, then add the cornflour mixed with the milk and whisk until thickened, let it bubble a few minutes then add half the grated cheese and pour over cauliflower then sprinkle on the remaining cheese.

cauliflower cheese 004It certainly satisfied my need for cheesey saucy cauliflower, the Engevita gives it a savoury flavour, think umami, and there is just enough cheese to give it a cheesey hit. I will make it again.

  1. Love the look of this and put the ingredients on my next shopping list. My mouth is watering at the thought of a tasty cauliflower cheese 😉

      Hi Kym, this is less rich than a conventional cauliflower cheese but it’s a good substitute and if you aren’t watching your weight you could add more cheese to the sauce and topping.
