Roasted roots with toasted walnuts, goats cheese and balsamic drizzle

I thought this would be a lovely healthy Halloween supper for the adults, and it doesn’t take that much effort. I  love roasted vegetables, and the ease of preparing in advance then throwing it in the oven while I go and do something else. I got some lovely carrots and beetroot at the green grocers, I thought the other ingredients like goats cheese ( just a little as a treat) , toasted walnuts and balsamic vinegar would work well adding texture and flavour. The veg were roasted with some garden herbs and a drizzle of olive oil.

Just before they were cooked I toasted some walnuts, tipped them out of the pan, then after a wipe I reduced the balsamic vinegar to half the volume in the same pan.

I love the contrast in flavour with earthy beetroot, tangy goats cheese and the sweet/sour balsamic drizzle.
